I am always looking for ways to get my toddler with multiple food allergies to eat more protein, and what easier way to do that than to cover the protein in chocolate.
Sweets for my sweets.
I will admit, my twins never ate as much chocolate as our toddler does when they were our toddlers age. It’s not that our views have changed about how much sweets and caffeine a child should have, it’s that our toddler has multiple food allergies and getting any protein in him, even if it’s a dessert, is better than him getting no protein at all.
Another reason our toddler eats more sweets is because he is on basically a fat-free diet which is not ideal for a growing toddler. Toddlers grow ever so rapidly and need some fat in their diets. Most toddlers get this through drinking whole milk, which our son cannot drink. The rice milk he can safely drink contains only 4% fat per serving, so we have decided it’s OK for him to indulge on the sweets a bit more to keep him thriving.
When you have a child with multiple food allergies who cannot eat the same food as everyone else in the house can, you cherish the meals you can eat together as a family, even if it is a simple dessert. This Muddy Buddy recipe is not only a safe treat for our toddler with multiple food allergies, but it is a treat our entire family enjoys together.
Muddy Buddy Recipe
This recipe is safe for a milk, soy, wheat, peanut, egg white, fish, shellfish, sesame seed, almond, barley, beef, berries, cinnamon, citrus, corn, coconut, green beans, honey, legumes, melon, and oat free diet.
Ingredients
- 4 1/2 cups Gluten Free Rice Chex
- 1/2 cup Enjoy Life Semi-Sweet Chocolate Mini Chips
- 1/4 cup Pumpkin Kernel Butter (see recipe)
- 1/8 cup Spectrum Organic All Vegetable Palm Oil Shortening
- 1 cup Cornstarch Free Powdered Sugar {Available at Whole Foods)
Directions
- Into large bowl, measure cereal; set aside.
- In 1-quart microwavable bowl, microwave chocolate chips, pumpkin kernel butter and shortening uncovered on High 1 minute; stir. Microwave about 30 seconds longer or until mixture can be stirred smooth or melt chocolate chips, pumpkin kernel butter and shortening on low heat in a double broiler. Pour mixture over cereal, stirring until evenly coated. Pour into 2-gallon resealable food-storage plastic bag.
- Add powdered sugar. Seal bag; shake until well coated. Spread on waxed paper to cool. Store in airtight container in refrigerator.

I cannot say how thankful I am that I ran across your page! I have a multitude of food allergies including casein, beef, milk, soy, nuts, peanuts, chocolate, and many other fruits and vegetables (the list goes on). But thanks for the great recipe, perhaps I can try this with white chocolate or carob.
